I've been making our tacos in the crock pot for the last year. In the morning I throw in some frozen boneless skinless chicken breasts into the crock. Then I sprinkle it with a taco seasoning packet. I
turn it on low and then just before dinner I shred the chicken with two forks. It works great and is super easy.

I guess the fact that it's slow cooked on low in the crock pot. Mine always makes a lot of it's own broth by the time it's done cooking. If you like it even more moist, you can do a whole chicken which will have darker meat.
If I'm doing the boneless, skinless chicken breasts I usually put them in around 10am and they seem fine for us. You could also add some boneless, skinless thighs that would make it more moist, again because of the red meat. Mine have always turned out okay though just with the breast meat.
