Bruschetta Sandwich

If you like the little bruschetta appetizers, you'll love this open face sandwich. Bruschetta is basically toasted bread brushed with olive oil, with sliced tomato, and a basil leaf. I've taken the idea and made a sandwich out of it.


Lightly brush both sides of a piece of bread with olive oil or butter (I use cracked wheat sour dough).

Lightly sprinkle with basil or italian herbs. (you can use fresh leaves of basil instead of dried herbs...it taste better that way anyway)

Layer sliced tomotoes and mozzarella cheese on top.


You can also add spinach if you like. You can also omit the cheese if you want to.
