Oatmeal Whole Wheat Chocolate Chip Cookies

I adapted this recipe from Deceptively Delicious. This is what I came up with and my kids loved them. Oh ya, my kids are eating zucchini whether they like it or not! Sorry the picture stinks!

1 c whole wheat flour
1 c old fashioned oats
1 tsp baking soda
1/2 tsp salt
1/4 tsp cinnamon
3/4 c firmly packed brown sugar
6 tbs butter
1/2 c banana mashed (about 1 banana)
1/2 c zucchini puree (about 1-2 small zucchinis)
1 large egg white
1/2 to 1 c chocolate chips

Beat egg and sugar together then add the remaining ingredients. Drop onto baking sheet covered with parchment paper. Bake 350 degree oven for 12-15 min. Let the cookies cool till firm and then move to a cooling rack to cool completely.

Did you use regular whole wheat flour or ground (finer) whole wheat flour?

Regular whole wheat flour.

I only use pastry flour so far for my pancakes and waffles. Everything else seems to do better with the regular whole wheat flour.

I haven't tried the whole wheat pastry flour in cakes yet though...that's my next experiment. =0) I'll let you know how it turns out.

Made them yesterday. My favorite cookies are oatmeal raisin, so I was not as thrilled with these. For me, they were just okay. BUT, my son, my friend, and her kids liked them. They really reminded me of banana bread with chocolate chips.
