Friday Fish Day!

If you've been reading this blog for any length of time you've probably noticed that I don't cook fish. I've never really liked fish....I know, I know...it's very healthy for you and I really should try it some other way than the ways I've had it. There's a part of me that really wishes I liked it and the Lord knows I've tried many times to convince myself that I really do like it. In fact, with enough breading and deep fried, I do like cod dipped in lots of tarter sauce. LOL. And I do love shellfish even though it's not that good for you so I try to stay away from it now but every once in awhile I treat myself to it.


So, why am I telling you all this???? I'm opening up this post as a way for you all to submit fish recipes! Please feel free to comment with your recipe or post a link to your recipe or a recipe you've found that you really enjoy. If one sounds good to me, I MIGHT even try it! So, post away. Share with others your great fish recipes! Convince me that fish taste good! =0)

I feel the same way! I know I should like fish, and would like to eat more of it. SO, if anyone wants to share, maybe I'll try , too! Also, I need hints for how to keep the house from smelling "fishy"- one of the main reasons I don't cook it!

I will submit a few recipes in the next few days. We love fish in our house (our 3 year old thinks it is great)......but NOT smelly fish. One source of fish for us is Trader Joes. They have marinated ahi and mahi mahi (and sometimes chimmichurri salmon) that is really good and easy to cook. Another hey thing is to not let it sit in the fridge too long. We have recently increased our intake of fish because my husband had high cholesterol. The truth is that I just make-up a bunch of my fish seasonings and marinades off of the top of my head, but I will try and put together a few in the next few days.

Okay....all measurements are estimated

FISH TACOS

About 3/4 lb of whitefish- tilapia, cod, or mahi mahi (we use tilapia)
1 T canola oil
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp oregano
1/4 tsp chili powder
1/2 tsp paprika
A pinch or two of salt
1 lemon
tortillas
Whatever else you like on your fish tacos. We use salsa, lettuce (or cabbage), cilantro.

Heat oil in skillet
Mix cumin, garlic powder, chili powder, paprika, oregano, and salt.
Sprinkle on the fish.
Cook fish in skillet. When about halfway done, turn it over. Squeeze the lemon (about 1T to 2T of juice) over the fish. Continue cooking until done.

Break up the fish and put in the bottom of the tortilla. We use corn tortillas from a local restaurant, or homemade flour tortillas. Add salsa and all other desired garnishes.

I'm gonna try those taco's shannon! I'm not a big cummin fan, so I would prob. put less in of that... You could prob. use fresh garlic too, yum :)

I use fresh garlic in my homemade salsa..... but you can use it with the fish too...just watch out for burning....burnt garlic is so rancid.

Here is another one that I make with tilapia. I modified it from a chicken piccata recipe. I buy the individual packs of tilapia from Albertsons for $1. Each little pack has two small, thin fillets.

Tilapia Piccata

4 small, thin tilapia fillets
2 Tablespoons flour
3 Tablespoons oil
1 Tablespoon butter
1 garlic clove, minced
1/2 cup chicken broth
1/4 cup white wine
2 Tablespoons lemon juice
1 Tablespoon capers

Dredge fillets in flour.
Heat butter and oil in skillet over medium heat.
Cook tilapia on one side for a few minutes.
Flip tilapia to other side.
After about 1 minute, add garlic, broth, wine, and lemon juice. Simmer for a few minutes until fish is cooked completely.
Remove fish from pan. Cook until thickend, adding capers for the last minute or two. Return fish to sauce, serve.

A few time we have bought salmon at Costco, cut it into sections, and froze the sections individually. When I am ready to use a section, I put it in the fridge at night, and cook it THE NEXT DAY. When I am in a rush, this is one option I have for it.

Skillet Salmon

Sprinkle onto one side of the salmon whatever herbs and seasonings you would like. We have an harb garden...but many times I just use dried herbs. We like granulated garlic, basil, thyme, oregano, and a wee bit of paprika. I also sprinkle on some seasoned salt or kosher salt (but regular salt would be fine too).
Heat 1 to 2 Tablespoons of canola oil over medium heat in a nonstick. Place salmon, seasoned side down, in the skillet. Cook 5 to 6 minutes, depending on the thickness of the salmon. (Be careful not to burn the fish or herbs.) While it is cooking, sprinkle herbs on the other side.
Flip the salmon over and cook until done. After it is flipped, you can squeeze a bit of lemon juice over it.

Just found your blog and LOVE it!! Here's a really simple fish recipe for you! If you are not a huge fish fan you will find most likely that you like the milder fishes....tilapia, grouper, mahi mahi, etc.
Tilapia Pockets:
4 frozen tilapia filets (I buy mine at Costco)
1 lemon
dill
parsley
2-3 baby carrots
place each tilapia filet on a sheet of aluminum foil (make sheet larget enough to make a pocket.
Sprinkle with dill & parsley. Grate carrot over top of the tilapia. Slice lemon and place a lemon slice on top of each filet. Pull sides of foil up around top and fold over on top and ends to make a pouch. Bake in the oven at 375 degrees for 15-20 minutes. Fish should flake away with fork. Very yummy and not to mention healthy too!
