INGREDIENTS
2 1/2 cups grated zucchini (about 2-3 small/med. sized zucchini)
1 egg, beaten
2 tablespoons butter, melted
1 cup bread crumbs
1/4 cup minced onion (I used green onion)
1 teaspoon Old Bay Seasoning TM OR Italian Seasoning
1/4 cup whole wheat flour
olive oil for frying
DIRECTIONS
In a large bowl, combine zucchini, egg, and butter or margarine. Stir in seasoned crumbs, minced onion, and seasoning. Mix well.
Shape mixture into patties. Dredge in flour.
In a medium skillet, heat oil over medium high heat. Saute patties in oil until golden brown on both sides.

These are wonderful served for lunch with salad.
Variations~
if you prefer to use a different oil you can because olive oil is easy to burn.
you can use Italian bread crumbs and omit the Italian Seasoning.

I am excited to try this one. My zucchini plants are just about ready to be picked.
We'll try these for lunch this week!
We made these tonight and they were great! The little guy helped me....and then ate 2 of them.
We finally tried these today. The flavor was great, but I did have a little trouble keeping the "cakes" together. I eventually added another egg, hoping that would help, but it didn't.
Any tips?
mmmm, mine held together okay...maybe try less crumbs and more zucchini with the two eggs.....hope that helps...otherwise, just be sure to press them together firmly and be gentle frying them. Be sure to cook them well enough that they are crispy and that might help them stay together well...I cooked mine till they were pretty dark...darker than in the pictures.
