With a few cooler days around here I'm getting that Fall feeling even though I haven't done nearly as
much summer cooking as I had hoped. So the other day I decided to try out another version of the this eggless chocolate cake recipe. Instead of Devil's Food Cake mix, you use Spice Cake mix. Once again, I'm totally impressed. 1 box spice cake mix (I use Better Crocker)
(do not add any of the ingredients on the box.)1 14 oz can of pumpkin or 1/2 of a 28 oz can (can NOT be pumpkin pie filling...just pure pumpkin)
Mix together and bake at 350 degrees for about 35 min. or until centers come out clean with a cake tester.
Notes: These were SO yummy that they could easily stand up to any complex pumpkin spice cake recipe. They were super moist too. 

Try sprinkling with a bit of powdered sugar for presentation.

Yummy! Those sound really good. I have a WW pumpkin spice bread recipe that's pretty good... It requires a lot more ingredients though. I wish that it would cool off here so that I could start baking/cooking more. It's just too HOT so we've been eating sandwhiches and salads all summer.

These look great. Did you add in any of the other cake ingredients? Or is just the cake mix and pumpkin?
Nope, just the cake mix...NO other ingredients besides pumpkin. =0)
Yes, they are those silicone ones and I picked them up at Target last week. I noticed that this recipe and the chocolate muffin ones are so moist they are a little sticky and hard to get out of the paper ones so these silicone ones work GREAT!
ooooh, you just reminded me that fall is right around the corner! I hadn't really thought about it much until now! I LOVE "fall baking" & can't wait to do some! You have stirred up my anxiousness for treats like this!! lol :)
We JUST made these & they came out GREAT!! Thank you SO much for a new favorite!!! We are waiting for them to cool all the way so we can frost them with orange frosting & sprinkles to make them look like little pumpkins! My sister called while I was making them & I told her about it, she was stoked to try it too since it's so EASY!! :)
