This yummy summer salad is so easy to make.
sliced tomatoes (any kind will do)
chunks or slices of whole milk mozzarella
fresh basil leaves
Italian dressing

I didn't have fresh basil leaves this year so the pics are without....I use Newman's Own Family Recipe Italian dressing (YUM!). You can make this early in the day and serve it up later...it's all the better.

I just made this the other day...before seeing your posting but this has always been one of my favorites. I had to use crushed dried basil but it was delicious! I love this blog but it´s also torturous since I can´t make 99% of the things on here! Wish I could come over for lunch or dinner!

Spinach salad with raspberry vinaigrette.
In individual bowls, top some fresh spinach leaves (or we sometimes substitute with red leaf lettuce) with raspberries, sliced kiwi, and crumbled goat cheese. We also use sliced strawberries and goat cheese. Top with the vinaigrette.
Rasberry Vinaigrette
1 part rice Vinegar
1 part raspberry preserves (I like Trader Joe's Reduced Sugar)
2 parts canola oil
Whisk together.
Greek Chicken Salad
CHICKEN
Cut up chicken breast into small chunks. Season GENEROUSLY with garlic powder, oregano, and a little bit of salt. Cook in oil. After a few minutes, add 2 to 3 Tablespoons lemon juice and cook until chicken is done. Add in some feta cheese and mix unti melted.
SALAD
Put on each plate (or bowl) lettuce, chopped tomatoes, chopped cucumbers and any of the following: artichoke hearts, roasted red peppers, kalamata olives.
Put the cooked chicken on top and top with the lemon vinaigrette.
LEMON VINAIGRETTE
1 part lemon juice
1 part olive oil (extra virgin)
oregano
pinch of salt
Whisk to mix thoroughly
