Uncle Charlie's Cukes


So, got a lot of cucumbers from your garden? This recipe is from my mom, Carol. Uncle Charlie is her grandmother's brother! Yep, probably one of the oldest recipes I've got other than Great grandma's coleslaw which is another family favorite of ours. Instead of typing it out in my words, I'll just post what mom wrote.....




"This recipe comes from my Grandma's brother, Uncle Charlie, who has long since gone to heaven, but lived in Minnesota and knew the best recipes for the abundant produce that came from the family garden."

8 Cucumbers
3 Red Peppers
3 Med. Brown or White Onions
2 Tbsp. Celery Seed
2 Tbsp. Real Salt or Sea Salt
1 1/2 cups Organic Sugar
1 1/2 cups Vinegar


Slice cucumbers, red peppers, and onions thinly. Toss to mix and pour Celery Seed and Salt over all. Mix sugar and Vinegar then pour over all. Refrigerate in a Pickle Crock or use a Tupperware type container. Ready to eat after three hours or up to 3 months in refrigerator. You can add cukes or peppers or onions at any time as the summer rolls by and your garden is giving fruit. My family loves these fresh, not too sweet pickles piled high on sandwiches. (The vinegar will cause the mixer to all shrink down some. So you can later transfer it to a smaller container if you'd like to.)




Okay, there's mom's recipe. It takes her and dad about 30 min. to make this but with my pampered chef slicer I had it done in about 10 min. I didn't have any red peppers but I was craving this so I made them without....and it was still wonderful! I only had 5 organic cucumbers on hand so I cut the recipe down a little. I also had an organic vadalia onion from my recent produce delivery and boy is that thing ever good in this recipe! I grew up eating these cukes and I'm excited to share them with my pickle loving kids. I see some awesome veggie sandwiches in our future! Just in case you are wondering .....they have a very smooth and mild flavor....they aren't strong at all. SO YUMMY!
