Kale Sandwich???


Since I get asked for more and more sandwich ideas..here's a crazy one for you...ya, kale. You know I'm on this kale kick and well, I stuck it in a grilled sandwich...I grilled the chopped kale first a bit (removes the bitterness) and then stuck it in the sandwich. Yep, I liked it.

I have a cast iron reversible grill/griddle and a cast iron press. Do you have any good tips on making panini sandwiches? My first few tries were not all that successful. I wish that I had bought a panini press by Cuisinart or something, instead. I wanted the cast iron, though.

I have a cast iron griddle pan as well and do not have a panini press. I haven't had trouble making panini's with mine...here are my suggestions:

1. make sure you don't over fill the sandwich.
2. layer a little cheese in-between each ingredient in your sandwich and the breads to help "hold" and "bind" the sandwich together.
3. Use a regular skillet or oven safe plate as a press with something heavy placed on it such as a glass bread loaf pan, another heavy dish, or small heavy pot.
4. an alternative press that works well is stoneware. Stoneware is heavy and makes a great press.
