Beets


Beets are good. Red beets stain. But beets are good. =0)

High in iron, beets are worth cooking. Wash them, cut off the ends, and then steam them with the skins on till fork tender. Once cool enough to handle, skins peel off with ease..in fact, they practically fall off. Serve them hot with butter and salt or let them cool and slice them for salads.

Instead of steaming them, cook them in your crock-pot on low for 4-6 hours or until fork tender.

Hmmm... I'm still not convinced they're edible. Pomegranates are also red staining foods, and they're yummy...

Have you ever tried making chips out of them like you would potato slices? Not sure how you would do that, but I know you could figure it out & it's pretty good... I've only had it in store bought version.

Here in Mexico they only eat beets as a cold sweet salad. They cook them and then add sugar and I'm not sure what else. I don't like them that way but they all thought I was crazy one day when I told them I put some beets in my soup! Funny how different cultures prepare foods so differently.

When you cook them in the crockpot do you add any water? I love beets but they always made such a mess when I tried to cook my own - this looks much easier! Thx for the tip!

Nope, I don't use water. =0) Just throw them in there and you're set. A lot less messy! =0) Thanks for the tip about the chips, Veronica! I can't wait to try them!
