In trying to eat healthier I try to remember to serve salad with dinner as many nights as possible in addition to a vegetable so that we don't all fill up on main dishes. But making a chopped fresh salad every night can be a lot of work (no, I don't use those ready-made salad bags that have preservatives...I really can't stand the taste of those but I'll eat them when I have to).
Don't forget the ease of a Caesar salad. it makes throwing a salad together for dinner very easy and quick especially if you pre-chop your lettuce ahead of time and store it in a zip-lock. Don't be fooled by iceberg lettuce either....choose a lettuce that has some nutritional value like romaine or curly leaf, etc.
I keep a bottle of Lighthouse Caesar dressing and dip in my fridge to make it fast and easy. Lighthouse is also lower in sodium than other dressings. If using it as a dressing you may want to thin it a bit with a little milk because it's really thick.
