White Bean Chili



1/2 pound of dry white beans (great northern or navy work well)
1 pound ground turkey cooked (or ground beef or omit it for vegetarian)
2 medium onions diced
1 bell pepper diced (red, yellow, or orange)
1 clove of minced garlic
1 packet of chili seasoning (or your own chili spices)
1 1/2 tbsp sugar
1-2 cans diced tomatoes (depending on how much you like tomatoes)
1-2 cans water
salt and pepper

Soak beans overnight in water. Drain water and put beans in slow cooker with remaining ingredients. Cook on low all day till beans are tender.

Serve with grated cheese, sliced avocados, minced fresh onion.

Variations-
-add other types of beans as well
-serve over baked potatoes

Tip-
soaking dry beans overnight does two things- 1. it softens the beans to speed up cooking time, 2. it helps release the content of the beans that causes, well, you know, the music you get the next day from that magical fruit.

I learned that tricked with soaking beans and was so amazed that it really worked! I've never tried white beans in chili but am definitley going to try because Bret doesn't like kidney very much and I think my chili needs a facelift!

Hey...I'm gonna bug you about measurements again....how many ounces is your seasoning packet and what size cans are you using for your tomatoes?

First let me say that you aren't bugging me! =0) Second, let me say that exact measurements with chili, stew, and soups is not crucial. If you like tomatoes, dump in 2-4 cans if you want to. =0) But, just for clarification, I use the organic diced tomatoes from Costco that come in 14.5 oz. cans.

I'm in the middle of experimenting with making my own chili seasoning packets so I don't have any on hand but I can tell you that I've used the McCormick or Lawry's seasoning packets from the grocery story that come in an envelope and say "Chili Seasoning" on them. I think that they are the equivalent to about 2 tbsp of your own chili seasonings.

Meantime, I will continue to come up with my own blend and hope to post it soon. =0)

Thanks! I made this the other day and the adults liked it but the kids didn't have any because a)I didn't want chunks of tomatoes on all their plates to clean up...something about liking fresh tomatoes but not cooked...go figure...and b)DH decided to "help" me with the chili seasoning and added some AFTER I did so it was REALLY too spicy for the kids!! LOL We will definitely try this again and play with the seasonings a bit...also will keep DH out of my kitchen!! heehee
