I realize that this post might gross out some people but I have to post it all the same. My mom made these for us, and my Aunt Noreen made these for her kids (this is the only way her kids would eat scrambled eggs), and now I make them for my kids. They are so creamy and yummy.Cut up small cubes of cream cheese and just before scrambled eggs are done cooking add the cream cheese cubes and stir till they soften. (the picture also has some diced green onion in them)

AFter reading this on your blog this morning, I made myself some scrambled eggs with cream cheese. MMMMMMMMMMM
That sounds good I love cream cheese. My husband grew up eating saltine crackers crumbled into scrambled eggs. They beat the eggs into a bowl, mix crumbled crackers and cheese in, then cook as usual. I was skeptical so the first time I made them I did it seperate for him and me and tried it. Its actually pretty good.
Sounds good to me!! I love cream cheese, but my hubby would not touch this with a 10 ft pole! LOL! We love to use our left over corn bread to make "kush"(not sure how to spell that, it's an old family thing). You just crumble up the cornbread in the eggs & cook them the same. We eat it with syrup...

I have eaten these all my life. My kids love them, and so does everyone who tries them.
My mother also used to make me grilled cream cheese sandwiches...just like grilled cheese but with cream cheese instead. Mmm they were yummy. I think I was a bit spoiled as a child! haha
