My daughter and I often have friends for tea and
Bake them on a cookie sheet till they are brown and crisp (according to package directions) and serve with lemon curd to spread on top of each cookie.
These are so light and butter they melt in your mouth after you take a bite of the crisp cookie. No one will know that this cute little cookie was your standby.
The ones in the picture are small but you can roll as many layers of puff pastry as you like to make bigger cookies.

where do you find lemon curd? Do you spread the lemon curd on the puff pastry and then roll into a log? I need a little more to go on if I am going to try and make these.

I apologize for not being more specific. No, you do not spread anything on before baking. Just roll up the pastry dough and slice it.
To serve them, spread lemon curd on them or other curd flavor...or even apple butter or honey. I buy lemon curd in my regular grocery store. It is usually by the jams and jellies.
