How is the eating-out-of-your-freezer-and-pantry-challenge going? Funny, I feel like I'm barely making a dent! I might have to carry this out for longer than 2 weeks....so far we've been able to eat up several things though and many of them were not-so-healthy items that I had bought long ago and now feel guilty eating so they would just sit there in the freezer never getting used. Now that I'm trying to eat out of the freezer we are slowly eating up all those things and it's nice to have them out of there finally. I've had to be creative about ways to use them in moderation and work them into our menu. But I can't stand being wasteful so I wanted to be frugal and use them. It feels great to get the out of the freezer and be done with buying unhealthy things!
How is the challenge going for you if you are taking the challenge?

Some days are easier than others. My pregnancy cravings don't seem to want anything from the freezer, fridge or pantry so there have been a few tough moments! We have also been filling the freezer with Robin's Pasta Sauce (thanks Jen!) and Chunky Marinara sauce made with 30lbs of tomatoes I bought at the Farmer's Market for $15!! I had all the ingredients so I didn't need to shop. Also, added about 20 cups of shredded zucchini I got off of Freecycle. Used some of it and the frozen blueberries I still had from last year to make a wonderful Blueberry Zucchini Bread! God has been blessing us so much, we have been putting more (free) food in, than taking out, it seems! We also continue to make homemade granola, yogurt, bread, refried beans and soup by just using what we already have.

I like this idea, but with company here this week it was not good timing for us. I really don't have a lot of excess food in the fridge/freezer. But, I do think we could get by on rice, beans, homemade bread, etc. for a short while, if necessary.
Jake and I are going on a date tonight, and I was very excited because Food, Inc. has been playing at the local theater. I checked the site last night and saw that yesterday (Thursday) was the last day that it was playing. So, that was disappointing, but I guess it's better that we not spend the $20 and just wait until the DVD releases...

Oh, I would LOVE to be just like you honey!! The thought of cooking nothing, but healthy foods sounds so great, but oh yes - what a challenge. Especially when you are first starting out. We are tying to use up everything in our fridge & freezer before we go on vacation because it is old (came with the house) & has been sounding like it is going to break down. We don't want to come back from vacation to a bunch of ruined food & a dead refrigerator!! I am hoping that this will help me out in the healthy food category when we get back because I will have some grocery shopping to do!
