1 store bought roasted chicken
tortillas
chopped romaine lettuce
caesar dressing
parmesan cheese
Pull meat off of bone. Chop meat. Warm tortilla. Spread dressing on to tortilla. Layer meat and lettuce. Sprinkle with cheese and wrap.
We use Casa Valdez tortillas because they have no hydrogenated oils. We also like the refrigerated Lighthouse dressings because they are pretty low in sodium.
For a variation on this or to get your kids to eat them...try using ranch or italian dressings instead. You can also substitute spinach lettuce for a high iron lunch. Also, to cut costs, you can cook your own chicken in a crock pot over night the night before. Let cool in the morning and debone. Left over chicken works well too.
