German Pancake

Melt one stick of real butter in a glass 9x13 pan in the oven while it is preheating to 450 degrees.
Beat by hand 6 eggs.
Stir in 1 cup flour. (we used whole wheat pastry flour)
Stir in 1 cup milk.
Pour mixture into melted butter in 9x13 pan and bake at 450 for 10 min.
Turn oven down to 350 and bake for 20 more minutes.
Serve with your choice of sour cream, jam, powdered sugar, syrup, fresh fruit, etc.
Got this recipe from mom. Grew up with her making it. =0)

This recipe reminds me of a similar one. My husband's family has an old recipe for German Apple Pancakes that is delicious (but I am NOT claiming that it is super nutritious). I can send it to you if you would like to try it.

GERMAN APPLE PANCAKE

Ingredients: 2 pared and cored apples, thinly sliced
½ cup butter
6 eggs
3 tablespoons sugar
1 ¼ cup milk
1 teaspoon vanilla
¼ teaspoon cinnamon
1 cup flour
½ teaspoon salt
3 tablespoons brown sugar


Directions:
1. Melt butter in 13x9x2 inch pan in the oven at 425°. Spread apple in pan. Return to oven until butter bubbles.
2. Whirl in blender eggs, sugar, milk, vanilla, cinnamon, flour, and salt. Pour over apples. Sprinkle with brown sugar.
3. Bake in oven for 20 minutes.

***We like to use Granny Smith apples for this.
