BBQ Chicken Pizza

This never sounded appetizing to me until my husband talked me into trying a version of this at a local pizza place. It was so good I had to duplicate it at home (only healthier of course). I made whole wheat pizza dough from this Quick Dough recipe (which in case you didn't notice, doesn't require any rising time!).

Thinly slice potatoes and cook till tender (I used my pampered chef mandolin for the slicing). Then I took 1/4 cup honey and mixed it with a 1/4 cup BBQ sauce. Spread that on your dough. Then layer it with cheese, the potato slices, and then shredded or sliced chicken. I used leftover chicken wings. You can use any left over chicken you have as well. Top with a few more pieces of cheese and bake according to the pizza dough recipe instructions. This was so yummy!
