Saute it in a skillet with olive oil, one clove of garlic minced and a dash of Italian herb seasoning
Once it's cooked through, make a sandwich out of it.
In the picture I used whole grain bread, sliced tomatoes, and avocados. It was wonderful.
I forgot to mention that I sprinkled it with salt as well. =0)

I happen to love eggplant. I baked some slices in the oven yesterday after I had brushed them with olive oil and sprinkled salt on them. They were delicious... and our 8 year old agreed!
