Whole Wheat Waffles from Scratch

This is my whole wheat waffles from scratch not to be confused with the box mix that I love. (although I admit that I used the same picture because they look the same LOL). Okay, this recipe is wonderful but I converted it to 3x the original recipe because I like to make a huge batch of these and freeze them so that I have them for fast breakfast that I can pop in the toaster. So, feel free to break this down 2x or 1x.

Mix together
5 1/4 c whole wheat flour or ww pastry flour
3 tbsp baking powder
1 1/2 tsp salt

Mix together in a separate bowl
6 egg yolk
5 1/4 c milk
1 1/2 c oil

Whip till soft peaks:
6 egg whites

Combine the dry and wet mixes together and then fold in the egg whites. Makes 25 waffles.

Why do you FOLD in the egg whites? I never get the point of that in recipes?

So that you don't break down the fluffy egg whites. You want to keep them foamy so that they make the waffles light and fluffy. If you stir them too hard they will break back down to watery egg.

Syrup-I just put some frozen berries in a pot and heated them till they cooked. Added a little organic sugar and used it as a syrup.

We need a new waffle iron... then I want to try these.
I have never thought about freezing waffles. And you can put them in the toaster, just like toaster waffles? Ben (my son) eats frozen toaster waffles(from TJs) regularly.

Yep, you can freeze them and then pop them in the toaster just like frozen store bought ones. =0) I used to go through so many ego waffles cause my son loved them and then when I wanted to switch to whole wheat I started making these instead. Freezing them and then putting them in the toaster kept my easy breakfast going! =0)
