I was in a hurry the other day and decided to make an abbreviated version of Parmesan Chicken which turned out quite well and was considerably less calories because I didn't use mozzarella cheese. =0)
Spray a 9x13 pan with olive oil. Spread about 1 c of pasta sauce in the bottom. Lay frozen chicken breast in the pan, sprinkle with Italian seasoned bread crumbs and Parmesan cheese. Cover and bake till cooked through (approx 375 degrees for about 45 min).
It was really good and the kids loved it. It was super fast and easy!
Oh ya, and take the foil off the last 10 min to brown the tops of the chicken.

We'll have to try this sometime this week. I've got the ingredients on hand, and I am keeping dinner very simple while Jake is out of the country.
