1/2 lb yellow summer squash thinly sliced
1/8 c toasted pine nuts or sliced almonds
1/8 c grated Parmesan cheese
4-6 tbsp of your favorite dressing or vinaigrette (I used a mix of my favorite Italian dressing -Newman's Own Family Recipe and Lighthouse Poppy seed, which is so fabulous you can dip fruit in it)
dash of pepper
Mix all of the above together and serve cold. Now, I'd assume that not everyone would like this but if you are a health nut I'm thinking
