Pineapple Corn Muffins

These are so good!

I bought a corn bread mix from a store here that sells products in bulk bins. You could easily adapt this recipe to any mix or recipe that makes about 12 very large muffins or about 18 medium sized muffins as seen in the pictures. I did not decrees the amount of water in the recipe. Adding the pineapple made them so moist. My family loved them!

3 c corn bread mix
2/3 c water
2 eggs
10 oz of crushed pineapple in juice (half of a 20 oz can)

Mix together and bake at 400 degrees for 15-20 min. (If using the pan only be sure to butter it well before pouring mix into it.)

I hope you do not mind me submitting a recipe, but....here is another variation on cornbread muffins that we have been loving lately. I modified it from a recipe from allrecipes. These are great warm. They only last a few days in the fridge. I have also done the same recipe with some meaty tart plums instead of the strawberries, adding a little bit of sugar to counteract the tartness of the plums.

Strawberry Cornmeal Muffins

Ingredients
1 cup all purpose flour
¾ cup cornmeal
½ cup white sugar
2 ½ teaspoons baking powder
¼ teaspoon salt
2 cups chopped fresh strawberries
1 (8 ounce) container strawberry yogurt
2 Tablespoons vegetable (or canola) oil
2 Tablespoons milk
1 egg, lightly beaten

Directions
1.Preheat oven to 350°F. Lightly grease 12 muffin cups or use paper liners.
2.In a large bowl, mix together the flour, cornmeal, sugar, baking powder, and salt.
3.In a separate bowl, gently stir the strawberries with ½ cup of the flour mixture.
4.Whisk the yogurt, oil, milk, and egg together. Stir the yogurt mixture into the flour mixture. Do not over mix. Fold in the strawberries.
5.Spoon batter into prepared muffin cups.
6.Bake in preheated oven for 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.


Note: If your yogurt is a thinner yogurt, reduce milk to 1 Tablespoon.
The muffins will seem soft. Let cool in the pan for a while. Store in the fridge.

I'm so glad you do! Thank you! I tried the fish tacos the other night and I liked them...although my husband didn't so much but he's not a fan of fish.

I am glad that you liked the fish tacos. So sorry your hubby did not, but since he does not like fish, it is understandable. At least you both are adventurous enough to try new things! :-)

Just tried these and devoured them! Husband, who usually doesn't like corn bread in any form, couldn't resist how moist these were.
