I love an egg sandwich. My mom and dad used to make these for breakfast a lot when we were growing up. It reminds me of garage sale days. Dad was the garage sale king...and I always loved putting on a garage sale with him. Mom would usually come out with these for us while we were negotiating deals on our junk. =0) Good memories. And THAT is why I always think of garage sales when I have one of these. Life is funny!
While bread is toasting, fry an egg and break the yoke. Sprinkle with salt and pepper. Put between toast and layer with a slice of cheese.
