1 beef roast (I use chuck)
2 packets of taco seasoning
Place beef roast in crock-pot on low long enough to shred (approx. 8-10 hours). Sprinkle with taco seasoning. When done cooking, shred.
Serve in corn tortillas with cheese, chopped cilantro, chopped onion, chopped tomato.

I do something similar with chicken breasts but have never done taco meat with a beef roast. I bet hubby would like that!

I'm always looking for crock pot recipes. So you don't add any water to this?
I don't use water because the meat makes it's own juice but if it's a particularly lean cut, you can surely add some water. =0)
We do ths too! But throw in about a cup of salsa and a tablespoon extra of jalepeno juice!! SO GOOD!
