Comments to talk about.....

There is some great info in the comments section in the post below. I wanted to point out two of them.

Jessica points out that Nourishing Traditions talks about the benefits of soaking beans per Amy's question about soaking beans to make them healthier. Unfortunately I foolishly packed my cooking bible Nourishing Traditions cookbook. Thanks Jess for pointing that out. I can't wait to unpack that book! For those that don't have Nourishing Traditions or like me, your copy is sitting in a box in your garage somewhere, maybe we can talk Jessica into sharing what page 495 says in a post on her blog. Pretty please with a cherry on top?

I also loved the info that Jessica quoted about beans and rice being a complete food. I did know that and should have posted about that in my original post so I'm glad that she reminded us. The cool part to me is that beans have lysine. Lysine is my favorite virus fighter. Whenever I feel like I'm getting sick I down a tone of L-lysine (I've been known to take 14 a day!) till the sickness is gone. Go beans!

Becca shared a link to a recipe for lentils that sounds amazing and I can't wait to try it! YUM! Thank you so much Becca for sharing it! I'm going to try it very soon! It's called Honey Baked Lentils...go check it out! I've browsed through some of Becca's other recipes and I'm thinking she's one amazing and healthy cook! Thanks for sharing your website with us!

Hey, thanks for the "advertising"! I hope you'll enjoy the lentil recipe as much as I do.

It's great to know that beans fight viruses! As a public transit rider, I tend to get exposed to everything but have some success at fighting off infections; I haven't been eating beans specifically for that purpose, but I've been eating extra fiber when I feel an illness coming on (NOT a digestive illness, a cold or sore throat or flu) because that seems to help. The late great George Carlin said, in one of his semi-serious comedy routines, that when you get sick you should "give it to your colon" by eating and drinking a lot to flush the germs out of the body, and I think there's something to that.
