Usually our "breakfast for dinner" meal is pancakes, but sometimes we'll have egg burritos.
To make sure I don't forget to have breakfast for dinner once a week, I make a point of putting it into my meal plan for the week on our meal plan calendar.
Here is my current meal planning method:
(I only plan dinners. Breakfast and Lunch are easy because I usually have things on hand for them or we eat leftovers at lunch.)

2 rice/bean dinners
1 pasta dinner (really is brown rice again)
1 chicken dinner
1 beef dinner
1 leftover dinner OR freezer meal
1 breakfast dinner
That's my method and it's not in any certain order. But those are the things I try to fit into one week. This way we are eating brown rice for at least 3 dinners a week. With this method we are also limiting our meat intake which I'll talk about more later.

We have breakfast for dinner one night a week. It's guaranteed that my kids will eat whatever I fix if its "breakfast" food. Fruit smoothies are the big thing around here right now. Pancakes and biscuits are in the rotation quite often. My daughter has an egg allergy so we try to stay away from them.
I am so enjoying your series on organics being affordable! This has really become a drive in me over the past year to feed my family organic and/or local food without going way over our small budget. My daughter has several food allergies (eggs, food dyes) that have forced me to find ways to make everything from scratch. It has been a challenge and I continue to learn more each day. I'm so thankful that I've been led down this path because my family is eating so much healthier now.

I haven't got it down yet & am currently looking for tips about meal planning (feel free to email me any more tips! LOL!) I love the idea of breakfast for dinner one night a week. I love breakfast for dinner, but had not thought of it going into my meal plans for some reason. Some of my favorite breakfast for dinner meals are baked french toast, oatmeal, or egg burritos, which you mentioned!
Let's see... fried potatoes with eggs (once the potatoes are tender, we like to cook the eggs "sunny side up" right on top) and frittatas are great, too- so versatile. I want to try your frittata with the potatoes and spinach.
