Coconut Rice

1 c Basmati Rice
1 can coconut milk
1/3 c shredded sweetened coconut

I made this in the crock pot the other night.
You can make it in your crock-pot or in a regular pot on the stove (on the stove, bring milk and shredded coconut to a light boil, add rice and simmer on low for 20 min.) For the crock-pot I cooked it on low for about 5 hours.
And, no, it didn't turn out yellow..it's just the poor lighting in my kitchen in the evenings.

I think that Crockpot might be one word. But who knows?

Ok, I HAVE to try this... I LOVE Coconut & I LOVE rice. This sounds awesome!!....

About your question... I have a cookbook called "Crockery Cookery" & it spells it with a dash, like this, Crock-Pot. Also, I discovered the term "Crock-Pot" is actually a brand name.. from the company Rival ( a "Rival Crock-Pot"). The rest of them are technically called slow cookers (kind of like how Kleenex is a name brand for tissues, but everyone says Kleenex to refer to any tissue). At least thats what my book implies, but it's also a really old book, so who knows! Just a bit of completely useless trivia... =P

ok, I just got back from the grocery store & bought the coconut milk (unsweetend, right? I've never bought the stuff). I'm gonna try this today... I hope I get it right! The rice, water, & milk just all go strait into the crock together & then cook on low for about 5 hours right?

Yep, and I'm pretty sure it's unsweetened...my store only had one kind and it just said Coconut Milk on it. Let me know how it turns out. It's yummy served with Hawaiian food, BBQ food, Indian food, etc.
