I've been working on coming up with a list of easy lunches that are healthier and provide some variety to our diet. I like to cook them from scratch as much as possible but keep them easy and it's all in an effort to avoid feeding my kids lunch meat, peanut butter and jelly, and hot dogs on a three day rotation! =0)
Here is the list that I made today and taped to the inside of my pantry door next to my dinner list.
tortilla wraps
simple tacos
macaroni salad and toast
pasta salad
grilled eggplant sandwiches
zucchini cakes
salad bar
homemade soup
grilled tomato & cheese sand. and tomato soup
grilled turkey and cheese sandwiches
tuna and crackers
tuna melts (recipe coming soon)
pita pockets filled with good stuff (goodwich; chicken salad, salad, veggies, etc.)
chicken salad and crackers
english muffin pizzas
toasted peanut butter and honey
bagel sandwich
stromboli
quiche
bakeover
fritta

One thing that is easy to make, freeze and reheat are chimichangas. I bake mine in the oven instead of frying them...they are so good!

We like having burritos and quesadillas a lot....the kids can make them on their own in the microwave after they fill them up or you can grill the quesadillas in a skillet so they have a great crispy outside. You can make your own refried beans and tortillas and add all kinds of yummy things for the inside.
Ya, I've been trying to avoid the quesadilla thing for the sake of cutting down on cheese unless it's paired with something. Quesadillas fall under the pb & j and hot dog category for me.
Well, first and foremost, my favorite thing for lunch is leftovers! It is so nice when I don't have to cook at lunchtime!
When I do prepare lunch, I sometimes make egg salad, chicken salad, or tuna salad sandwiches.
If you haven't seen this link, yet, check it out. I've tried a few of her crock pot lunch recipes and they're quite good! And, if you make a large enough batch, you'll have leftovers !
This is OT, but I have a question for you. You shop at costco. Do you do better at costco or at the major stores with coupons? I am a costco member and don't shop there often. I'm a big coupon shopper but it takes time. I'd like your thoughts on this subject please. Thanks!
